Shami Kebab is one of my favorite recipe, its old version original real recipe.

Shami kabab is a form of meat kebabs that style in India and neighboring countries.

These are created with ground meat or chunks of meat stewed with Chana gram masala, spices, ginger, garlic, and herbs. These are slightly on The heavier side and calorie dense hence these are served occasionally.

The Shami is an Authentic Hyderabadi, and Lucknow cuisine

which is made by a paste of meat and chana dal(chickpea lentils).Also, check a meat kofta instruction that is nargisi kofta and it’s too a Hyderabadi delicacy…

The shami kabab is within the sort of mutton patties that are shallowly cooked in oil and that they are sometimes ingested with rice or are often ingested as an aspect dish along with dal recipes.

Texture Of Shami Kabab

The texture is very smooth and they can be made into any shape be it round or oval or the shape you prefer. They are a snack item in Muslim households. It is also a Ramazan special starter or snack direction.

Soaked chana dal

Wash, soaked chana dal one hour,and cook until chana dal is fully tender.

Mutton, beef, chicken.

I am using fresh Mutton cut into cube and add some whole spices, and add water, and cooked until mutton very soft, tender.

I am using pressure cooker, and meat cooked proper tender, soft.

Once meat or lentil cooked then Mixed together, and grind a smooth mixture and form a dough.

I am adding chopped onion, chopped coriander leaves, chopped green chili, and two whole eggs.

Add all chopped vegetables in shami kebab mixture, mix very well.

The dough to 8 to 10 equal parts and make balls. Flatten them and make kebabs on your palm. Place them on a plate.

In a large pan add little oil, once oil is medium hot add one by one Shami kabab until kebab is frying golden brown, upper side crispy, inside soft.

Serve with green chatni, salad, onion rings.

Ingredients

  • 750 g Fresh Mutton Cut into cubes
  • 150 g Chana Dal, Soak in water 1 hour
  • 1 inch whole cinnamon stick ( dalchini )
  • 2 Black cardamoms / elaichi
  • 1 tbsp whole cumin seeds
  • 1 tbsp Crush red chili
  • 3 whole cloves
  • 1 tbsp Whole black peper
  • Oil for frying
  • 2 whole eggs
  • 1 tbsp Ginger garlic paste
  • Salt to taste
  • 1 Large onion ( chopped )
  • 1/2 Bunch Coriander leaves ( chopped )
  • 4 Green Chili ( chopped )

Instructions

  • First, wash and soak chana dal in water an hour, then cook 2 cups hot water
    Do not add too much water.
    until chana dal fully cooked, put it on the side.
    Step 2:
    I am using mutton, in a pressure cooker, add all whole spices, and add 2 cups hot cooked until the meat is fully cooked, soft.
    Note )  Do not add too much water.
    Once chana dal and meat cooked add both of them together.
    Add in Blender this mixture makes a smooth dough. 
    Chopped all green masala, onion, coriander leaves, green chili, then add
    in kebab mixture,  Then add 2 eggs only as needed for binding.
    Divide the dough to 8 to 10 equal parts and make balls. Flatten them and make kebabs on your palm. Place them on a plate.
    In a large pan add oil lightly hot add one by one shami kebab, fry until 
    golden brown for both sides.
    Crispy shami kebab is ready to serve green chatni and onion rings.
